Mbappe struck twice in a 3-2 away win at the Allianz Arena, inflicting Hansi Flick's first Champions League defeat as manager.
He was utterly unplayable, his pace and dribbling proving to be a nightmare for the likes of Niklas Sule, Jerome Boateng, David Alaba and Lucas Hernandez.
The 22-year-old raced in behind and beat Manuel Neuer early on in the first half, before twisting and turning Boateng inside out and slotting the ball through his legs for his second and PSG's third in the 68th minute.
Mbappe has terrorised a whole host of defenders since he exploded onto the scene for Monaco, but Van Dijk managed him brilliantly when they came up against one another on the international stage.
The World Cup winner ran at the former Southampton man in a 1v1 situation but Dutchman played out perfectly.
Not rushing into a clumsy tackle, Van Dijk jockied Mbappe and then made a strong challenge to thwart him as he tried to get a shot away.
A wonderful piece of defending from Van Dijk, who showed how to deal with a player of Mbappe's ilk.
The former Celtic centre-back has also made Erling Haaland look normal when the Norwegian machine was playing for Red Bull Salzburg.
In the final Champions League group stage matchday in 2019, the striker was played through and darted in behind with some serious speed.
However, Van Dijk displayed excellent recovery pace to get back and intercept the pass, putting an in-form Haaland on the deck after giving him a nudge.
