Wout Weghorst gave Wolfsburg the lead inside two minutes but Emre Can equalised from the penalty spot just past the half hour mark.
Donyell Malen gave Dortmund a second half lead before Haaland sealed victory late on.
It caps off a week which has seen Dortmund fail to qualify for the last 16 of the Champions League.
Defeat to Sporting CP means Dortmund will be playing Europa League football from February.
